Pear & Blueberry Crumble

I absolutely love hot puds as the nights grow cooler and darker. This crumble is perfect for those cosy evenings and an all round favourite with the whole family. No refined sugar and certainly no compromise on taste.

It really is delicious and the crumble is the perfect blend of sweet, crumbly and crunchy.

So lets get started on this quick and easy recipe:

Filling:

  • 4-5 ripe pears
  • 3/4 cup Frozen blueberries
  • 6 tbsp Maple Syrup

Crumble:

  • 1 cup oats
  • 1 cup quinoa puffs
  • 1/2 cup ground Almonds
  • 1 tsp cinnamon
  • 4 tbsp Maple syrup
  • 4 tbsp coconut oil (melted)

Method:

Pre heat your oven on 180/gas mark 4.

Peel and cut your pears into chunks and add them along with the blueberries into a baking dish and drizzle over your maple syrup. Place it in the over for 15mins or until the fruit is starting to soften nicely.

While that is in the oven prepare your crumble. Start by adding all your dry ingredients to a bowl and mix. Then add your wet ingredients to the dry mix and stir well until combined and there are little chunks of the mixture forming.

When your fruit comes out of the oven pour the crumble mixture evenly over the top and pop  back in the oven for around 20 minutes or until lovely an golden.

I like to serve it with coconut yoghurt but it would work beautifully with nice cream etc.

Enjoy!!!!
