These are the most indulgent, yummiest thing on the planet and so so sooooo easy to make! They are chewy, gooey and just AMAZING!
They are free from dairy, gluten and refined sugar, winning all around and even the children love them.
I hope you love them as much as myself and my family do…in fact I wish I had some now!
All you need is a few ingredients and a food processor the more powerful the better but it really doesn’t matter.
INGREDIENTS:
BASE:
1/2 cup almonds
1/2 cup Medjool dates (or normal dates soaked)
2tbsp Coconut oil
1/4 cup Cacao (or good cocoa powder)
CARAMEL:
1 cup Medjool dates
1/2 cup coconut oil
2tbsp of tahini but you can sub for almond, peanut or cashew butter. All work well and I do it quite often.
2tbsp Maple syrup
1tsp vanilla extract
TOP LAYER:
1/4 cup cacao
1/4 coconut oil
1/4 cup maple syrup
Tip: Add a topping, chopped nuts or dried fruit all work well.
METHOD:
Start with the base. Add almond to food processor and pulse until crumbled. Add the other ingredients and whizz up until it all comes together. Empty into a silicone loaf tray or whatever else you have to hand (be sure to line anything that isn’t silicone) and push down firmly with the back of a spoon. Place it in the freezer while you make the rest.
Empty all the caramel ingredients into your food processor and whizz up into a smooth caramel consistency. Stick witth it, it will come together. Take the base out of the freezer and spread the caramel on top. Pop back in the freezer.
Lastly add all the top layer into a pan over a low heat and stir until it melts together creating a raw chocolate (YUM!). Pour over your other layers and pop back into the freezer again for a good 45mins-1hour before slicing.
Store these in an airtight container in the fridge or freezer depending how hard you like your caramel (we like them kept in the freezer).
